The Best Overnight Oats for Any Day of the Week

Mornings can get pretty crazy over here and breakfast is the first thing to go if I'm running late or kiddos need some extra snuggles. This wouldn't be a big deal if I could handle an empty stomach, but I can't. I get super grumpy and have extra low energy. The solution? Overnight oats!

Obviously, this is not a new idea and there are a gazillion recipes out in the world, but this recipe is my favorite. It's simple, delicious, and nutritious. I usually make them on Sunday night and enjoy them on the weekdays, at my desk or while I'm teaching. My first class starts at 7 so we all basically eat breakfast together. Hmm...our very own breakfast club. That's fun!

My husband asked me to make him overnight oats for camping since we wouldn't have our blender to make his usual smoothie and he fell in love. I am now making 10 jars of this recipe on Sunday nights. They really are just that good! We were even happy skipping the obligatory bacon and egg camping breakfast. If you read about our snacking situation while camping it won't surprise you that having a no-fuss breakfast is right up our alley.

You just mix the following ingredients in a glass jar, shake and stir, put a lid on, and keep in the fridge to enjoy each morning.

Ingredients:
1. 1/2 cup oats (not quick cooking)
2. 1 tablespoon chia seeds
3. 1 serving chocolate protein powder (we use this kind #subscribeandsave)
4. about 3/4 cup non-dairy milk
5. 1/2 cup berries of choice
Bonus: I sometimes sprinkle in some ground flaxseed for good measure

If you're in the market for glass jars, I suggest Walmart or Target. I've found them the cheapest at these places.

They seriously are the easiest breakfast. I love eating chocolate every morning without feeling guilty about it. I'm thinking of making enough for the weekends, too!

With that said, I could definitely use some ideas about how to switch the flavors up. I'm thinking of chocolate cherry or mango vanilla. Thoughts?

Happy meal prepping!
