My Morning Veggie-Packed Smoothie

If you're looking for a way to get more vegetables into your diet, look no further! These veggie-packed chocolate smoothies will please any chocolate lovers tummy. And here's a secret, you can really have this at any time of the day. Breakfast or dessert. It's up to you!

Since starting my #100daypregnancychallenge, I've been looking for ways to get more veggies into my day. Like most things, if I feel successful from the start of the day, I am more likely to follow through as the day progresses. This is where this veggie-packed chocolate smoothie comes in. I have this a few times a week and it makes me feel so good! It has 2 complete servings of veggies (more or less depending on how much you decide to include in your smoothie) and it tastes like chocolate. When my husband makes it, he includes peanut butter and I feel like I'm drinking a chocolate peanut butter cup for breakfast. No complaints here.

1/2 frozen banana chunks
1/2 cup frozen zucchini chunks
1/2 cup fresh spinach
1 to 2 scoops chocolate protein powder
1/4 cup oats
3/4-1 cup non-dairy milk
Pinch of flaxseed *optional
1 tablespoon peanut butter *optional

Put all ingredients in your blender of choice (we have this one) and blend until you achieve the consistency you desire. Start with less milk and gradually add in more until you find the thickness you like.

Smoothies are a wonderful way to get kids involved in cooking and exploring different foods. We still have dino nuggets and quesadillas way more than I'd like to admit, but we also have smoothies, so that's a win in my book.

I have made these with all fresh ingredients but I much prefer when the banana and zucchini are frozen. It's just much more refreshing that way. When it's not super cold from the frozen ingredients, it kind of tastes like a salad with chalky chocolate dressing. I don't recommend it. I either cut the produce up and freeze it in a single layer and then transfer it to an airtight container or simply throw the slices in an airtight container to freeze all at once. Freezing it in a single layer is the way to go so it doesn't get stuck together. But honestly, sometimes you just have to save time where you can.

How do you get veggies into your diet? More importantly, how do you get veggies into your kiddo's diets? Smoothies are great, but I can't live on them...I need more ideas.

  2. I don't think I've ever seen zucchini in a smoothie before - especially not one that also has chocolate in it, but I'm intrigued. I mean, I love a good chocolate chip zucchini bread, so I bet this would be yummy too! I'll have to try it for myself some time.

    1. If you're expecting chocolate zucchini bread, this is not the smoothie for that. You literally cannot taste it at all. For health benefits though, it's worth a try.

    1. Even doing one a week is a great start! Like I said, I don't have one EVERY single day. Give yourself grace.

  4. I love smoothies in the morning. I love that I can take them with me and have a healthy way to start the day.

    1. Yes! What I don't like about taking smoothies with me, is when I forget to rinse them out when I get to work or I just plain don't have the time. They're a bummer to wash. Ha!
