My Favorite Instant Pot Recipes from Around the Web

I asked a friend if I could borrow her Instant Pot before I considered buying one. Thankfully, she agreed because I started using it so much! At least multiple times a week. Then for Christmas, she & her husband actually bought us one. It was such a surprise & one that I am thoroughly enjoying. I think the stomachs of so many others are, too. Haha. I've tried a lot of recipes over the past few months so I thought I'd gather our top 5 favorites here.


Cheeseburger Mac & Cheese from Damn Delicious
I could tell this was a crowd pleaser when the bottom of the Instant Pot was scraped clean. This is like a fancy hamburger helper, which I'm not even a little sad about. It already includes some veggies but I think I will try to add more the next time I make it or just add a salad on the side. It is pure comfort food. Plus, Damn Delicious has SO many amazing recipes to check out. 

I tend to have a different taste in food & style of cooking than my family (parents & siblings) but this was a hit with them. I took it over to my parents' house one night & all skepticism was pushed aside after everyone took their first bites. Plus, we had all the toppings: sour cream, cheese, jalapenos, hot sauce, lime, etc.

French Dip Sandwiches from A Mind "Full" Mom
This recipe was amazing! It was the first thing we decided to make after choosing to give up eating out for 3 weeks. I seriously wanted a french dip sandwich but we couldn't go buy one. To be honest, my hopes were low on this one simply because I wanted something so specific, hello #pregnancycraving, but I was pleasantly surprised. We will be making this again for sure! It was also a crowd-pleaser. 

Shredded Chicken from delish
I make this chicken multiple times a month. We usually use it for tacos, salads, quesadillas, and soup. I use salsa verde instead of tomatillo salsa because I had it on hand the first time I made it & it turned out great. When we're feeling fancy, Josh fries it up in a pan before we use it for tacos. I'm planning on making a HUGE batch to freeze before the baby comes. 

Sweet Potatoes from Sweet Peas & Saffron
This isn't a meal in itself but I will say that cooking sweet potatoes in the Instant Pot has taken away all of my disdain for cooking them. I always undercooked or overcooked sweet potatoes in the oven but Sweet Peas & Saffron has such foolproof directions for how to cook them, including specific cook times based on the size, that they turn out perfectly every time. You won't want to cook them any other way again.

  2. This really makes me wish I had an instant pot. I have a slow-cooker, which has it's uses, for sure, but an instant pot sounds so handy. I'll have to get one in the future to make these delicious meals!
